The most memorable meals in Greece rarely begin with a plan. They begin with something seasonal, a recommendation from the person serving you, another plate added to the table and the decision not to rush.

Markets are the best place to understand this instinct. Produce is chosen by touch, recipes are discussed as personal history and lunch can easily become the center of the day. In Athens, the food markets still carry this everyday energy alongside a new generation of cooks and small restaurants.

Our favorite food experiences are not built around tasting as much as participation: shopping, cooking, sharing and understanding why a dish belongs to a particular place.

A Greek meal is less a sequence of courses than an invitation to stay a little longer.
